My food plate so far! Green lentil and sweet potato curry. It had a hint of spice, and the lentil with sweet potato combination was really good.
If you want to make it for your dinner, here's the ingredients:
Ingredients
- 1 tbsp olive oil
- 1 finely chopped onion
- 2 tbsps curry powder
- 1 lb sweet potatoes (peeled and cut into 1 inch chunks)
- 1 head cauliflower (2 12 pounds stemmed and separated into florets)
- 1 cup Green lentils (picked over well rinsed and drained)
- 141/2 ozs diced tomatoes (with juice)
- coarse salt
- plain low-fat yogurt (serving optional)
